If you can think of a vegetable then someone will have a recipe here for it, including, potato, zucchini, eggplant, carrot, spinach, mushrooms and pumpkin.
This is a very yummy potato bake that I always get requested to bring for Christmas or any other family get together. Best of all its really easy to make. You can really put pretty much anything between the layers, but I think an onion type flavour and a bacon type flavour taste best.
Serve this hearty curry with a big bowl of basmati rice or some naan bread that has been heated in a low oven.
This baked savoury slice is very nice served with a tossed salad or eaten on its own as a snack. It's a nice addition to school lunches.
This soup is great for healthy, hearty eating. Use whichever pumpkin you prefer - any type will taste great.
Yummy zucchini corn fritters - we can't get enough of them. These fritters are light and fluffy with lots of zucchini and fresh corn.
A lovely moist cake with carrot, coconut, pineapple, chopped walnuts and raisins. Topped with a cream cheese icing.
Steak and broccoli are quickly cooked in a soy ginger sauce. Serve hot over steamed rice for a healthy, quick weeknight dinner.
Chicken pie is a favourite with my kids just like it has always been a favourite of mine. This is a creamy version with mushrooms and leeks topped with puff pastry.
This was given to me by a friend about 25 years ago. I have been making it ever since for family and friends. It is delicious with all sorts of foods, from cold meats to barbecues. It is best made with ripe outdoor tomatoes as they have more flavour and colour. Always bottle in clean sterilised jars with non-metallic lids.
A great vegetarian dish that is reeaalllly filling...! It can take some time to cook as the liquid needs to absorb bit by bit, whilst stirring, to get the creamiest result without burning the bottom of the pan. I buy pre-sliced mushrooms to save on prep time.
