This a rice salad that has an Asian twist, I developed it for something different. It was very well recieved at all buffets. It is very refreshing and moreish also low in fat and most popular, I have not seen anything similar. This is very healthy and suits all dietary requirements YES even VEGAN.

This is a very healthy brown rice salad. So much good stuff in it - chickpeas and feta as well as vegetables-it could easily be a meal on a hot night. Best to make it the day before so you you can chill it overnight. My family love it:-)
