The secret to a rich and moist fruitcake with tender dried fruit is a recipe with the ingredients being boiled before baking, thus the boiled fruitcake.
This is an easy and wonderfully tasty sultana cake. Initially the sultanas are boiled which creates a nice soft fruit that some other versions of sultana cakes don't have.
This recipe was given to me by my mother. When made it doesn't last long. My hubby loves it and it is delicious.
This is a boiled fruit loaf. You could use any sort of fruit you fancy in it. Substitute the butter for margarine and it is dairy free as well as egg free. It is a very good keeper (if it lasts long enough). Tastes better after a couple of days. Suitable to freeze. Serve buttered.
This throw together” fruit cake is not a decadent fruit cake but is scrumptious nonetheless. I offer it to you as a perfect natural rescue remedy for any sugar cravings, or as a quick easy cake for surprise guests. You could literally throw this together and be chowing down in under an hour.
I make this at Christmas but you could make it any time. It is lovely with no icing etc, kids demolish it in no time. You can place almond halves, whole cherrys etc at the bottom of the pan for decoration. Great to freeze and have ready for those surprise occasions. Prenzels is a New Zealand made product.
