This oddly wonderful combination of ingredients makes a surprisingly different and delicious soup that everyone will enjoy! Serve with a dollop of yoghurt on top and some crusty bread for dipping.

As weird as most people find this soup sounding, there is a resounding response. Everyone LOVES it. Also, it may be hard to find hominy, which is a form of corn maize, here in Australia. My solution is to replace it with a white bean.

This fragrant, spicy soup is infused with ginger and garlic to give it a characteristic Asian flavour. Rounding out the soup and noodles are several super foods: cabbage, carrots, tofu, vinegar and corn. You can substitute diced cooked chicken for the tofu, and use any type of noodles you like.

In Asia, there are different kinds of 'noodle soup'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the shallots as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. If you are adventurous, eat with chopped hot chilli pepper or add some dried chilli flakes to make the soup spicy.

This is a wonderfully simple chunky soup. I use good quality bacon. It tastes equally good made with pancetta. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour.
