Seitan is a protein rich food made from wheat gluten, and is used in many vegetarian dishes. This recipe makes basic pieces that you can crumb and fry it to be served as cutlets or nuggets, similar to chicken, or use it chopped in salads. Seitan soaks up so much flavor, the possibilities are endless so go ahead and experiment with your favorite seasonings.

Anyone who truly loves you will love you with garlic breath, too! Chicken is pan seared and then finishes cooking on a bed of garlic cloves. Toss with tagliatelle and herbed tomatoes and onions. Use any cut of chicken you like with this recipe - two pieces per person.

This delicious stew is inspired by my friend from Sierra Leone, West Africa. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

Perfect for feeding a crowd at a summer barbecue, this is a tasty twist on the classic American recipe for baked beans. The variety of beans used gives the dish great flavour, along with the streaky bacon. Try this for a break from the ordinary. If you don't have French's mustard to hand, substitute half a tablespoon of English mustard.

The easiest way to make this is with a slow cooker. The beef will fall apart easily with a fork, making it easy to shred. You can put the meat into the slow cooker either fresh or even straight from the freezer. Serve in pita bread or tortillas with shredded lettuce or coleslaw.
