Vietnamese Rice Paper Rolls
Recipe by:
Paula
These spring rolls are really healthy and not fried. They make a lovely change for a summer party served with one or both of the dipping sauces. Well worth the effort - these are fantastic.
Vietnamese Beef Pho
Recipe by:
Maryellen
In this classic soup, paper-thin slices of raw beef are cooked with rice noodles in individual serving bowls into which hot spiced beef stock has been added. For a more authentic tasting pho, use pho stock cubes bought from an Asian grocer.
Chicken with asparagus and capsicum
Recipe by:
Ariana Klepac
Stir-frying is not just for Chinese dishes. This quick and healthy method of cooking works just as beautifully in this chicken and vegetable sauté, seasoned with garlic and rosemary. A bowl of basmati rice is the perfect complement.
Rhubarb and saffron creme brulee
Recipe by:
Elaine Russell
A tart compote of rhubarb makes a nice contrast to this rich custard. While there is no way to completely streamline a crème brûlée, this special-occasion treat is lightened by the fruit and its use of less egg yolk and cream (which is reduced-fat to boot), yet still retains its rich indulgent nature.
Sweet and sour duck
Recipe by:
Zoë Harpham
Cumquats are a small citrus fruit, like an orange, but the whole fruit is edible, adding a great tangy flavour to this easy stir-fry dish. Cumquats are believed to symbolise good fortune in the Far East. If you prefer, you may omit them.
Swordfish with tomato olive sauce
Recipe by:
Patsy Jamieson, Diane Temple
Firm fish like swordfish and blue-eye benefit from this easy two-step technique of first browning the steaks on one side and then finishing cooking in the oven (cooking the fish entirely in the frying pan can make the outside tough and requires more fat).
Healthy Honey Treats
These are great for breakfast on the run or (in my case) fussy little eaters who don't fancy sitting down to a bowl of high fibre breakfast cereal each day. You can use just about any high fibre breakfast "flake" cereal on the market - there is so much choice! I have found the ones which contain fruit, nuts ir granola are particulary popular in our house.
Creamy capsicum and mushroom pasta with ham
A simple creamy pasta dish that is very tasty. This serves 2 but can easily be changed to accommodate a larger serving size, and preferences on how much of each vegetable is desired. Do not leave out ANY ingredients as this is a very simple dish and the taste will be compromised.
My favourite colourful brown rice salad recipe
This brown rice salad recipe is made every Christmas without fail. It is a favourite of every member of the family, and whenever we have guests, they remark on the flavour of this beautiful colourful brown rice salad as well. Goes great with a BBQ other crisp leaf salads, cold meat, just about everything, use as a side dish or as a main with other salads and meat. The Green & Red capsicum and the black raisins make it a very colourful salad.
Spicy Chicken Spring Rolls
This recipe has evolved from a traditional Vietnamese rice paper roll and has become a family favourite. Always keep a good supply of rice papers and vermicelli or noodles in the pantry and this recipe can be adapted to whatever meat and vege you have.
