This recipe is for making your own liqueur but be patient - it takes a few weeks before you can use it. You will need a wide neck jar for this too. You get the added bonus of some deliciously preserved alcohol-soaked apricots too. Eat the fruit separately, warmed through and served with ice cream.

Freeze the bananas before you use them in this drink and you wont need to water the taste down with ice. The blend of bananas, pineapple juice, coconut and rum is fantastic and extra creamy without being gluggy. Cheers!

These are really easy crowd pleasers. They can be served hot and then the flavour changes when they are served cold. I can't decide how I like them best.Depending on how many moulds you use depends upon your yield. for example one sheet of pastry will give you 12 little tart cases.
