This is a great Pad Thai that can be adjusted to your taste, add ingredients that you like and make it as spicy or tart as you want. This is a recipe for those who like it HOT, if you can't handle the heat, go easy on the chilli.

Looking for a refreshing, sweet and spicy salsa for a warm summer evening? This is our favourite. Serve with corn chips. This is also fantastic served on grilled fish.

Almost any whole fish can be cooked with this method but snapper is particularly good with the Thai flavors. If you can find it, try fresh galangal in place of the ginger, the flavor is unique.

Trout in foil parcels, baked with green chillies and lemon juice. An impressive presentation, and there's no washing up! Use red chillies if you prefer a little less heat.

This is a handy mix that can be made ahead of time. Just add to a glass of vodka and ice, and garnish with celery sticks and slices of lemon. It can also be drunk without alcohol as a Virgin Mary. Try at your next brunch or party.

Very tasty, spicy meal with a few extra ingredients. Use your favourite beer to add to the overall flavour. If you can leave this sit overnight for the flavours to develop but is also ok to serve immediately.

Pueblo Indian tradition calls for the addition of corn or potatoes to this dish. Serve with a big green salad and a pile of warm tortillas. It also makes a wonderful filling for enchiladas.
