This is the treat my children love to make themselves after a good term at school or when they have a friend staying. One cake is big enough to share between 2 children if you can convince them of it!!!

Make this sweet almondy cake when fresh rhubarb is in season. This recipe makes two cakes so you can give one away.

This no-guilt treat is surprisingly moist and has a wonderful flavour. It's also a great way to use up over-ripe bananas. For a little variation, you can add nuts or sultanas.

These delicious dessert muffins are best eaten warm from the oven. The addition of yoghurt makes the muffins wonderfully moist and soft - if they have to travel, pack them carefully because they will squash out of shape easily. This is for a blender but you can mix with a bowl and spoon if you prefer.

This is a wonderful celebration cake-chocolate and cream. You can prepare the syrup before you start the cake and let it cool.

This slice is easy and quick with only a few ingredients. Don't tell anyone that it is sour cream on the top of this slice and they will think that it is cream cheese!!!

A little diced apple makes these rock cakes moist and fruity. This is a very good recipe for younger members of the family to make. Not only will they easily master the basic cooking skills, they'll enjoy eating the results of their labours.

This is a delicious, moist fruit loaf that is great on its own or spread with a little ricotta cream or margarine.

Dried fruit adds an intense flavour to this cake and the cooked apples make it beautifully moist. Serve with whipped cream for an extra treat.

This quick-to-make cake combines the goodness of oats and cornmeal with plump apricots, brown sugar and the alluring sharpness of ground ginger. There's no butter here: the shortening is mild-flavoured, heart-protective olive oil.

This recipe was given to me by my Aunt Karen when I was 12 for something easy to cook. Now I've perfected it and it is what I get asked to bring to any family occasion. I hope you enjoy it!

This is a nourishing cake-like bread that does not compromise on flavour. Buttermilk guarantees it will turn out moist. Great for an afternoon snack.

I'm glad my mother gave me this recipe. I think it's better than regular pumpkin pie, because it doesn't have a really strong pumpkin taste. Use butternut or other sweet pumpkin and make sure the pumpkin is well drained before pureeing.

An old recipe adapted with lower sugar than the original, with some healthy possible substitutions and nut free (though you can add some if you like!). This has been a favourite in our family for nearly 10 years.

Quick and easy to prepare, this cake makes a healthy snack for hungry children or a handy addition to lunchboxes. And it's a great way to use up bananas that have been sitting in the fruit bowl for too long.

This nourishing cake keeps well in a covered container for three or four days. A denser cake with a more pronounced banana flavour is obtained by using very ripe bananas.

A low-fat banana bread flavoured with chai. Chai is a spicy Indian tea, available in most any supermarket.

Banana, coconut and pecans give this cake a unique flavour. Best if made a day before serving.

Ripe bananas, nature's star sweetener, are the basis for this moist, tasty loaf.
