I usually make this moist cake in the days between Christmas and New Year so I can use up leftover pantry ingredients from Christmas baking. You could also add nuts or other dried fruit.

Freeze the bananas before you use them in this drink and you wont need to water the taste down with ice. The blend of bananas, pineapple juice, coconut and rum is fantastic and extra creamy without being gluggy. Cheers!

This is a very tasty and easy-to-make Filipino chicken dish made with soy sauce, garlic and vinegar. I can just as easily double or triple the chicken in this recipe to serve guests at a party. Serve over rice with just a little of the sauce (not too much).
