This is pure heaven - well I think so anyway! It's sweet, melts in your mouth but is not chewy. This version is flavoured with chocolate and it makes a great gift. I always make some for my daughter's teachers at Christmas.

Cheesy jacket potatoes

I think this was the first recipe we were taught in Home Economics!! There is no baking involved so these are much quicker. You boil the potatoes first, then make the filling, then put them under the grill. Pure comfort food!

Yummy Pesto Mashed Potato

There are so many types of pesto available now so you can choose the type you want depending on the main dish. By simply adding one tablespoon of pesto to boiled potatoes then mashing, it adds a delicious alternative with a hint of colour to the usual mash....and guess what.....the kids just love it too! You could also add some sundried tomatoes and top with a little grated Cheddar and black pepper.

Butternut Pumpkin Pastry for Pies

I love pies (my favourite meal is pie and mashed potatoes!) but I don't like the fat content of the pastry so I came up with this simple but very delicious idea. Use as you would any ordinary pastry or for pasties. All measurements are approximate. If you don't like the hassle of peeling the butternut pumpkin you can split it in half, take out the seeds and roast in a hot oven until it's soft about 30 - 45 minutes.

Quick Spiced Fruit Relish

This chutney or relish is quick and easy as it uses cranberry sauce from a jar. It's a blend of spiced apple, cranberry, apricots and raisins and is delicious with cold meats. It does taste better after it has chilled for at least 3 hours.

Roasted Vegetable Stock

This is a terrific stock with roasted vegetables and caramelised onions as a base. The veggies are then added to a pot with water and herbs and simmered to make a rich, delicious stock. Use a sieve to remove the vegetables and you have two litres of stock. Freeze in ice cube bags to have stock on hand whenever you need it. The cooked vegetables make great baby food!
