This delicious stew is inspired by my friend from Sierra Leone, West Africa. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

As weird as most people find this soup sounding, there is a resounding response. Everyone LOVES it. Also, it may be hard to find hominy, which is a form of corn maize, here in Australia. My solution is to replace it with a white bean.

Perfect for feeding a crowd at a summer barbecue, this is a tasty twist on the classic American recipe for baked beans. The variety of beans used gives the dish great flavour, along with the streaky bacon. Try this for a break from the ordinary. If you don't have French's mustard to hand, substitute half a tablespoon of English mustard.

Beans are the magic ingredient in this tasty artichoke dip. It makes an appealing starter and is an excellent choice for year-round entertaining as well. Try it with Wholemeal pita crisps (recipe on this website) or a selection of fresh vegetable sticks.

My friend Kathy gave me this recipe, and it's great. So filling, great in a thermos for lunch or school in winter.

A simple and tasty bean salad inspired by fresh Mexican flavours. This is great on its own with tortilla chips, or as a side to tacos, burritos or fajitas.

Use fresh sprigs of rosemary to garnish this zesty combination of cannellini beans, herbs and spices. Serve with bread and crackers. Borlotti beans can be substituted for cannellini beans.

This has comfort food written all over it: corned beef, baked beans, mashed potatoes and cheese layered in a casserole dish and baked. I've never actually used Spam in this dish but I think it would find a happy home here if you're a Spam fan!

Falafels, the traditional Middle Eastern bean patties, are usually deep-fried. This updated version, delicately spiced and crunchy with grated carrot, is baked for a lower-fat result, but is just as delicious and is served in Lebanese bread with salad.

My mum came up with this recipe when I was a teenage vegetarian - and it is one of my meat-loving husband's favourite dishes and still one of mine to this day.

Salmon is one of the best sources of omega-fatty acids. It also provides valuable minerals, while fresh salmon in particular supplies copious amounts of niacin.

A quick and easy non-meat version of the Mexican-ish dish. Perfect for parties. Serve with Guacamole, sour cream cheese dip, salsa and a side salad. It doesn't get better than this!
