This is a very yummy potato bake that I always get requested to bring for Christmas or any other family get together. Best of all its really easy to make. You can really put pretty much anything between the layers, but I think an onion type flavour and a bacon type flavour taste best.

I was so pleased to discover that my wonderful Lemon Meringue Pie recipe that took years to perfect is just as good, if not better, when made lactose and gluten free! For the intolerant among us enjoy this delicious dessert... It's best served cold the next day but I often can't wait and love a slice when it's still warm and fresh out of the oven... ENJOY!

These are so easy to make when you use a bread machine. If you don't have a bread machine, see directions. You can use any flavour of jam - raspberry, strawberry, blackcurrant or even lemon curd. Serve them plain, sugar-coated or iced.
