Chicken/Mushroom Ragout

    My Mum used to cook this in the old green enamel dish on the wood stove when we were kids and now I do it in the crockpot, very easy for people who are busy working or just everyday Mums. I always roll the chicken in flour before putting in the pot.

    Ingredients
    Serves: 2 

    • 1 litre salt reduced chicken stock (you can make your own stock)
    • 1 tablespoon horseradish mustard
    • 1/4 teaspoon pepper
    • 4 boneless chicken thighs ( 2 skinless chicken fillets)
    • 3 cups fresh mushrooms, halved
    • 1 cup sliced carrots
    • 1 cup sliced leeks
    • 1 cup of water
    • 2 tablespoons cornflour

    Directions
    Preparation:10min  ›  Cook:6hours  ›  Extra time:50min  ›  Ready in:7hours 

    1. Place all ingredients into the crockpot and leave on low all day. Just before serving turn on high and thicken with water and cornflour.
