Jo's Slow Cooker Bacon and Corn Chowder

    This chowder is better than any pea and ham soup you could ever make. If the bacon bits you buy are a little chunky, cut them into smaller pieces. If you can't find smoked bacon bits, regular bacon bits are fine, smoked just provide a richer flavour.

    Serves: 8 

    • 1kg smoked bacon bits
    • 1 large brown onion, chopepd
    • 1 clove garlic, crushed
    • 2 large potatoes, peeled and cubed
    • 1 litre chicken stock
    • 1 (500g) packet dried soup mix or split peas
    • 2 (420g) tins creamed corn
    • Salt and pepper to taste

    1. Cook the bacon, onion and garlic, stirring, in a oiled frying pan over medium-high heat for 5 minutes or until onion softens.
    2. Add the bacon mixture to a slow cooker with the potato, stock and soup mix.
    3. Cook on high for 3 hours. Add the creamed corn and cook for a further 1 hour. Season with salt and pepper.
    4. Serve with crusty bread for a hearty filling meal.
