Tilapia with Parmesan Cheese

This recipe was given to me by a friend. However, I made some changes and this is what I came up with for a very tasty and easy to make recipe.

Ingredients
Serves: 2
- 450g tilapia fillets or other fish fillets
- 2 Tbsp. butter. softened (divided)
- 1½ Tbsp. lemon juice, freshly squeezed
- ¼ cup freshly grated parmesan cheese
- 2 Tbsp. mayonnaise (Kraft Miracle Whip preferred)
- 1 each green onion, finely chopped
- 2 large garlic cloves, minced
- ¼ tsp. Old Bay seasoning (if you can’t find old bay, substitute with ½ tsp cayenne and 1½ tsp paprika)
- ¼ tsp. dried basil leaf
- good pinch black pepper
- 2 dashes Tabasco sauce or a hot sauce

- Preheat oven to 180 degrees C. Rinse fish fillets under cold water and pat dry with paper towels.
- Prepare a 15x23cm oven-proof casserole dish by rubbing bottom with 1 tablespoon of butter. Place fish fillets in a single layer in the prepared dish.
- Brush the tops of the fillets with lemon juice, turn over and brush the other side with lemon juice.
- Bake in preheated oven for 10 minutes or until the fish just begins to flake; Do not overcook.When fish is baked, remove from the oven.
- Meanwhile, in a bowl, combine cheese, remaining 1 tablespoon of butter, mayonnaise, green onion, garlic, Old Bay seasoning, dried basil, black pepper, and Tabasco sauce.
- Turn the griller on to HIGH to preheat.
- Spread the cheese mixture over the fish fillets and place under the grill, just below it and grill on HIGH for 2 minutes or until a light golden brown. This time seems to work real well and you do not want to overcook the Tilapia.
- Serve with your choice of cooked basmati rice.
