I make this once a week at least in the winter. Its great when we come in from football, or to have with a garlic loaf while we are watching football or need a quick wholesome snack before we go out. I omit the onion as I can't eat it, but it tastes great all the same. Its an excellent recipe to get veggies into your children, my son loves it and doesn't complain about the vegetables!

Serves: 4 

  • 30g butter
  • 500g chicken thigh fillets diced
  • 1 onion sliced
  • 1 crushed clove garlic
  • 2 chopped bacon rashers diced
  • 1 chopped stick celery
  • 1 chopped carrot
  • 410g tin crushed tomatoes
  • 310g tin red kidney beans, rinsed & drained
  • 3 cups stock or water and 1 small chicken stock cube
  • 1/3 cup small pasta
  • 2 tablespoons chopped fresh oregano (optional)
  • 1 tablespoon fresh chopped parsley

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Heat butter in pan and add chicken, onion, garlic and bacon.
  2. Cook stirring until chicken is almost cooked.
  3. Stir in celery and carrot and cook 5 minutes. Stir in tomatoes, beans, stock and pasta. Give a stir so that pasta does not stick.
  4. Bring to boil and simmer uncovered about 30 minutes or until slightly thickened. Stir in herbs, simmer uncovered 5 minutes. Serves 4.

Unfortunately, this soup tasted fairly bland. Have amended recipe to replace tinned tomatoes with mild salsa and have made a few minor alterations. That should improve the flavour considerably. The salsa provides a wonderful zing to soups. - 23 Apr 2016
