    This recipe was created because I enjoy no-fuss ONE pot cooking, which can be prepared in a reasonably short time, and can be refrigerated to eat again the following day.

    Ingredients
    Serves: 4 

    • 2 tablespoons olive oil
    • 700g minced beef
    • 2 Chorizo sausages, cut in halves, then sliced
    • 1 x 420g tin red kidney beans, rinsed, and drained
    • 1 x 425g tins diced tomatoes
    • 1 red capsicum, seeded and diced
    • 1 medium brown onion, diced
    • 1 dessertspoon ground coriander
    • 1 dessertspoon ground cumin
    • 1 dessertspoon curry powder
    • 1 dessertspoon chilli powder
    • 2 cloves garlic, crushed
    • 140g tomato paste
    • ½ cup beef stock
    • ½ cup red wine
    • Salt and pepper to taste

    Directions
    Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

    1. Heat oil in a large frying pan. Add onion, garlic, chorizo sausages, capsicum and spices; cook stirring until onion is soft.
    2. Add beef; cook stirring, until beef has changed in colour.
    3. Add tomatoes, kidney beans, tomato paste, and red wine and beef stock. Season with salt and pepper to taste
    4. Simmer, for about 15 minutes, or until mixture thickens.
    5. Enjoy

    This recipe is so easy. The only change I made was I used Salsa because I had no tomato paste. Even better the next day. - 01 Nov 2016
