    A taste of the Caribbean without the jet lag.

    Serves: 4 

    • 1 kg chicken fillets (breast or thigh)
    • 1 tablespoon vegetable oil
    • 800g tinned tomatoes
    • 1-2 chopped chillies
    • 1 tablespoon brown sugar
    • 1/2 teaspoon allspice
    • 400g tinned mango slices
    • 1 tablespoon lemon juice
    • 1/4 cup sultanas
    • 1 firm banana

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Cut chicken, drained mangoes and banana into bite size pieces. Heat oil in frypan, add chicken and cook over medium heat till brown approx. 5 mins.
    2. Remove chicken. Add tomatoes, chilli, brown sugar, allspice, lemon juice and sultanas and cook over medium heat, 3 mins. Return chicken and cook till chicken is cooked through approx 5 mins. Add mangoes and bananas and warm through.
    3. Serve over a bed of rice.
