- BBQ chicken or or left over roast chicken
- 3-4 shallots chopped
- 1 capsicum diced
- 1-2 cups tasty cheese (as needed)
- 4 diced tomatoes
- jalopenos to taste
- salt and pepper to taste
- 1-2 packets cheese corn chips

- Arrange corn chips on one big platter or individual serve sized platters
- Mix shallots, capsicum, jalopenos, tomatoes well in bowl add diced chicken. Spoon on top of corn chips. Sprinkle cheese over each one
- Microwave each plate for about 2-3 mins, or large platter for around 5-6 mins on medium/high setting.
