    Absolutely delicious. Broccoli soup is my boyfriend's favourite, and this is a modification of his recipe. For the original substitute the head of cauliflower for another head of broccoli, add an extra cup of stock and omit the parsely.

    Ingredients
    Serves: 6 

    • 1 medium brown onion diced
    • 2 medium head of broccoli
    • 1 medium head of cauliflower
    • 3 cups (750ml) vegetable stock
    • 200ml un-thickened fresh cream
    • 2 tablespoons cornflour
    • 2 tablespoons chopped fresh parsely

    Directions

    1. Cook the onion in a pot with a little oil on low heat until it is clear and soft.
    2. Roughly chop the broccoli and cauliflower and add to pot. Sautee/steam for a couple of minutes until broccoli is bright green in colour.
    3. Add vegetable stock and replace lid on saucepan.
    4. Simmer for 5-10 minutes until broccoli and cauliflower are soft and tender. Do NOT over-cook and have vegetables falling apart.
    5. Blend together using blender or food processor.
    6. Blend again while slowly adding cream.
    7. Mix cornflour with small amount of water (approx 1 tablespoon) until liquid (not paste).
    8. Blend all mixture again and then return to pot.
    9. Stir through parsely and simmer for 5-10 minutes until soup thickens.
    10. Be careful not to burn the soup to the bottom of the pot.
    11. Serve with cracked pepper and fresh crusty bread.

    Used different ingredients. Being allergic to dairy, I swapped the cream for coconut cream and it worked beautifully! A simple swap made this allergy-friendly for me. - 10 Sep 2010
