Mango and sago coolie

    This is an easy-to-do very yum summer dessert! I've tried several modifications but the best milk to use is evaporated milk!

    Serves: 4 

    • 2 large mangoes (preferably Kensington Pride)
    • 100g small sago, cooked as per package instructions
    • 1 large can (375ml) evaporated milk
    • 3 tablespoons sugar
    • 100 ml thick cream (optional)

    Preparation:10min  ›  Extra time:8hours chilling  ›  Ready in:8hours10min 

    1. Peel mangoes and cut mango flesh into small cubes. Discard mango seed. Put chopped mangoes in a bowl.
    2. Combine evaporated milk and sugar. Stir until sugar is dissolved. Mix in sago & chopped mango.
    3. Chill mixture overnight. Serve with cream for a rich, delightful dessert on a summer day!

    LOVE it! So quick, simple and yummy! I used a tin of mango instead of fresh (though I'm sure it would be even nicer with fresh ones). Can't wait for my 3 year old son to try it for dessert tonight! Thanks so much for sharing this recipe!!! :D  -  09 Nov 2009
