Rocky road truffles

    This recipe l designed for my students and has been a great success. When rolling the truffles keep a small bowl of water next to you so that you can dip you fingertips, in order for the truffles to be rolled with ease. You may also use sprinkles instead of rolling them into coconut.

    • 1 packet Arnotts Marie Biscuits
    • ½ cup of dark chocolate chips
    • ½ cup of mini coloured marsh mallows
    • 1 Tbs dutch cocoa
    • ½ cup (45g) of desiccated coconut
    • 1 can (395g) sweetened condensed milk
    • ½ cup extra of coconut

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Crush all the biscuits, either place in a plastic bag and gentle hit with a rolling pin or place in a food processor.
    2. Combine the chocolate chips, marshmallows, cocoa, coconut and condensed milk in a large bowl. Add method 1 into method 2. Use a spatula or gloved hands to mix ingredients together.
    3. Place the extra coconut in a small bowl.
    4. Using slightly wet hands that have gloves on, roll approximately 1 tbs of the mixture into balls, keeping them all the same size. (Bite size) Roll the balls into the extra coconut.
    5. Place them onto a tray covered with baking paper. and then put them in the fridge to set, about 30 minutes. Yummy! Enjoy! But eat in moderation.

    This recipe was delicious and very easy to make. I have made it several times and those I make it for always ask me for the recipe.  -  18 May 2009


    Made these in advance over christmas and they came in so handy whenever we had guests over. Very fun and easy, they last for aggeees, but the only change i made was to cover them in a layer of chocolate once they were set to give them richer, higher-quality flavour.  -  15 Feb 2013  (Review from Allrecipes UK & Ireland)
