Cut avocado with knife lengthways and remove seed.
Scoop avocado flesh out of avocado and place in a bowl. Using a fork, mash the flesh until it forms a butter. Sprinkle with a pinch of sea salt or seasoned salt (or more, to taste). Sprinkle with enough lemon juice to cover and mix. Or more, to taste.
Serve with corn chips for dipping or spread over toast.
Optional: place on toast and then top with grated cheese and melt under grill.
