This is a dish that you can put in anything you like. It is great for hiding veges for kids. They love it. because it is chopped up small they don't really notice. Be adventurous. Substitute for your fave ingredients. Use what you have in the fridge.
Preheat oven to 180 C or 160 for a fan forced oven
The preparation is very simple. Once you have diced and chopped all of the ingredients into small pieces.... in a large mixing bowl mix together well the chicken, cream, onion, celery, mushrooms, carrot, capsicum, garlic, herbs and basil.
In a separate bowl mix the pasta sauce and wine together.
Now the fun part - get the kids involved they will love it! Stuff the cannelloni shells with the chicken mix.
In a large dish, place 1 layer of stuffed cannelloni shells. Pour over water and half of the pasta sauce mix. Add another layer of cannelloni shells pour over remaining sauce mix.
Spread cheese over the top and cover the dish with foil. Cook for 40 mins or until the cannelloni is soft.
I like to uncover the dish for the last 10 mins to brown the cheese.
What a great recipe. My family loved it. Used 600ml thickened cream to make sure the mix was sloppy. Also I put the skin and wing tips from the BBQ chicken in some hot water while I broke up the chicken then added one cup of the cooled chicken skin water instead of the plain water. I also used a 4 cheese pizza mix on the top. - 21 Feb 2014
