    I came home last nite late and thought, as we do, what to cook??! Well I looked in the fridge and found chicken thighs (great flavour) carrots, spuds, onions, chicken stock and leftover peas. I just threw them all together with some seasoning and hey presto... a wonderful simple and fast food to cook in the microwave, if you have one, or in the oven.

    Ingredients
    Serves: 4 

    • 4 carrots
    • 2 onions
    • 4 potatoes
    • leftover peas/beans etc. (optional)
    • 4 chicken thighs, diced
    • pepper and salt
    • pinch of basil
    • pinch of oregano (herbs can be fresh)
    • 2 cups (500ml) chicken stock
    • 1/2 cup beef stock, if needed to taste, optional
    • 1 cup good quality red wine
    • 1 tablespoon Nandos Lime & Coriander sauce or tomato paste for a redder richer flavour, whatever you have in your cupboard would work

    1. Cut carrots in large chunks diagonally across, cut onions into quarters, cut potatoes in large chunks and dice the chicken thighs keeping them the same size as the rest of the vegies. Put everything into your earthenware casserole dish or similar, then pour over your stock add seasoning and give it a stir. All the vegies and chicken should be covered. Put the lid on your dish and put in the microwave for 20 mins on high. Make sure you put your casserole on a plate to catch the juice that will erupt while cooking. After 20 mins you should be smelling some wonderful smells.
    2. Pour the juices that have collected on the plate back into your casserole and add the wine and extra stock if needed. Add your sauce or maybe something similar. Cook for a further 10 mins.
    3. If you want a redder sauce add tomato paste instead of the lime/coriander sauce and adjust your taste to suit.

    Very quick and easy to cook. I divided the recipe in half for 2 people and cooked for 20 minutes then added some cornflower to thicken and a couple of tablespoons of Oyster sauce then cooked for a further 5 minutes without the lid. Wll certainly make again. Thank you for sharing. - 14 Mar 2013
