Linda This is my hearty "bowl of comfort" to eat while curled up in front of TV on a winter's evening....and it's so easy to throw together! You could even add mushrooms, eschallots or even spinach for a variation.

Ingredients

Serves: 4
  • 500 grams beef tortellini
  • 3 - 5 rashers of diced bacon
  • 1 cup frozen peas
  • 1 cup thickened cream
  • 1/2 cup grated parmesan cheese
  • salt and cracked black pepper

Preparation method

Prep: 5 minutes | Cook: 20 minutes
1.
Boil the tortellini in plenty of salted water according to packet directions and drain.
2.
While the pasta is on the boil, fry the bacon in a small saucepan, add the peas and cream and simmer for about 5 minutes until the peas are cooked through.
3.
Return the drained tortellini to the stove in it's saucepan and add the cream sauce. Stir through the parmesan cheese, salt and pepper.
4.
Serve with an extra sprinkle of parmesan cheese.

Made it vegetarian. substituted bacon with vegetarian bacon ,the cream with a cup of whisked silken tofu and tortellini with spinach tortellini

I am not a very experienced cook so this was very easy to make and fast. I added a few fresh mushrooms too. I'll definitely make this one again. Yum!
