Herby Onion and Butter Bean Mix

    My mother makes this as a base for two of our favourite recipes, Citrus Hummus Pasta and Spiced Butter Bean Patties, but it can also be used as a side dish. If you're not a fan of thyme, we've tried this with Rosemary and it tastes absolutely delicious as well! You can also use chickpeas instead of butter beans.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 red onion, sliced
    • 2 tablespoons pumpkin seeds
    • 1 tablespoons fresh thyme, chopped
    • 400g can butter beans, drained and rinsed.
    • salt and pepper, to taste

    1. Heat olive oil in a large pan. Add onion, pumpkin seeds and thyme. Cook gently for 15 minutes, until onion is soft.
    2. Add butter beans. Mix well and season with salt and pepper.
