Sweet Shortcrust Pastry

    The trick to this home made pie pastry is refrigerating all the ingredients before mixing them. Use this pastry as a base for your next fruit mince, apple or any fruit pie.

    Serves: 8 

    • 400g plain flour
    • 100g butter
    • 1 teaspoon baking powder
    • 50ml ice water
    • pinch of salt, to taste
    • 30g sugar
    • 30ml olive oil
    • egg white

    Preparation:15min  ›  Cook:10min  ›  Extra time:2hours chilling  ›  Ready in:2hours25min 

    1. Put all ingredients in the fridge for 30-60 minutes.
    2. Remove and sift Flour. Add baking powder. Cut butter into flour. Add salt and sugar then mix together, adding ice water gradually. Mix in olive oil. Wrap in cling film and put in fridge for one hour.
    3. Remove from fridge and roll out to 1/2cm thick. Press into pie dish. Brush egg white over pie crust to prevent soggy crust before baking.
