Blender Hollandaise Sauce

    This Hollandaise has all the classic ingredients, but is so much easier because it is made in the blender so the sauce will not separate.

    Serves: 4 

    • 3 egg yolks
    • 1/4 teaspoon Dijon mustard
    • 1 tablespoon lemon juice
    • a dash of Tabasco or other hot sauce
    • 125g butter

    Preparation:5min  ›  Cook:1min  ›  Ready in:6min 

    1. In the container of a blender, combine the egg yolks, mustard, lemon juice and Tabasco. Cover and blend for about 5 seconds.
    2. Place the butter in a glass measuring cup. Heat butter in the microwave for about 1 minute or until completely melted and hot.
    3. Set the blender on high speed and pour the butter into the egg yolk mixture in a thin stream. It should thicken almost immediately. Keep the sauce warm until serving by placing the blender container in a bowl or pot of hot tap water.

    Altered ingredient amounts. I didnt use the blender, I just melted the butter and whisked it into the ingredients whilst the jug was sitting in a sink of hot water. Less mess.... and it tasted great!  -  06 Jul 2010


    Altered ingredient amounts. Had no mustard so used a teaspoon of ground mustard seed, and all the juice from half a lemon-probably double the amount in the recipe, added a touch more tabasco and a good pinch of salt.  -  20 Apr 2009
