Zucchini muesli chocolate chip biscuits

    These biscuits have lots of hidden goodness and taste great too. These biscuits will stay soft and moist because of the zucchini.

    Serves: 12 

    • 125g butter
    • ½ cup (110g) white sugar
    • 1 egg
    • ½ teaspoon vanilla essence
    • 1½ cups grated zucchini
    • 1½ cups plain flour
    • ½ teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1 cup instant oats
    • 1 cup muesli
    • 2 cups dark chocolate chips

    1. Preheat oven to 180 degrees C.
    2. In a medium bowl, cream butter and sugar until fluffy. Stir in the egg and vanilla, mix well, then stir in the grated zucchini. Sift together the flour, baking soda and cinnamon, stir into the zucchini mixture. Finally, stir in the oats, muesli and chocolate chips.
    3. Drop dough from a teaspoon onto an ungreased baking sheet. Leave about 5cm between biscuits. Bake for 10 to 12 minutes in the preheated oven.

    So... I've made this recipe dozens of times... They look nothing like the picture BUT all my friends RAVE about them... I have constant requests to make them again and again and again... (I generally triple the batch... and use fruit and nut muesli).  -  19 Nov 2013


    This recipe definitely sounded delicious but as I was making it I felt that two cups of chocolate seemed too much (for my taste), so added half the suggested amount and threw in some criasins and sunflower seeds. They worked really well & would definitely make again!  -  31 Aug 2016
