Chicken Capsicum Quesadillas

    A lovely recipe for family dinners. Chicken is seasoned, grilled and then simmered with capsicums and onion.

    Serves: 20 

    • 500g skinless, boneless chicken breast, diced
    • 1 packet (40g) fajita seasoning
    • 1 tablespoon vegetable oil
    • 2 green capsicums, chopped
    • 2 red capsicums, chopped
    • 1 onion, chopped
    • 10 (25cm) flour tortillas
    • 500g grated Cheddar cheese
    • 2 rashers bacon, fried or grilled and chopped

    1. Preheat the griller. Grease a baking tray.
    2. Toss the chicken with the fajita seasoning, then spread onto the baking tray. Place under the griller and cook until the chicken pieces are no longer pink in the centre, about 5 minutes.
    3. Preheat oven to 180 degrees C.
    4. Heat the oil in a large saucepan over medium heat. Stir in the green capsicum, red capsicum, onion and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
    5. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the cheese and bacon. Fold the tortillas in half and place onto a baking tray.
    6. Bake quesadillas in the preheated oven until the cheese has melted, about 10 minutes.
    7. Cut into wedges to serve.

    I was looking for something easy to cook, and a bit different and stumbled across this recipe. There are alot of different types of cooking techniques used with this - frying the bacon, grilling the chicken, cooking everything in a saucepan on the stove and then into the oven when the tortillas are filled. Next time i might try just cooking the mixture in a saucepan and see how that goes. The end product was a bit too salty for me, so may leave out the bacon in future too. Not bad though. Will make again, but probably not very soon.  -  22 Jun 2010


    Very long winded, I made these in about 15 minutes, grill the chicken pieces first, then pan fry (but without oil) the tortillas with everything inside. also used avocado yummy. good recipe but bit longer than it needed to be  -  28 Oct 2011


    I agree-it is a bit over-engineered. I left out the bacon and dry fried the final product-not baked. I didnt mind grilling the chicken though-keeps it all low fat. Plus I halved the recipe. Having said that - I really liked these and they went down very well!  -  24 Aug 2010
