A lovely recipe for family dinners. Chicken is seasoned, grilled and then simmered with capsicums and onion.
I was looking for something easy to cook, and a bit different and stumbled across this recipe. There are alot of different types of cooking techniques used with this - frying the bacon, grilling the chicken, cooking everything in a saucepan on the stove and then into the oven when the tortillas are filled. Next time i might try just cooking the mixture in a saucepan and see how that goes. The end product was a bit too salty for me, so may leave out the bacon in future too. Not bad though. Very long winded, I made these in about 15 minutes, grill the chicken pieces first, then pan fry (but without oil) the tortillas with everything inside. also used avocado yummy. good recipe but bit longer than it needed to be - 28 Oct 2011
I agree-it is a bit over-engineered. I left out the bacon and dry fried the final product-not baked. I didnt mind grilling the chicken though-keeps it all low fat. Plus I halved the recipe. Having said that - I really liked these and they went down very well! - 24 Aug 2010
