    A good tomato pasta base is essential for dishes such as pizza, pasta or parmigiana. If you have an abundance of tomatoes it freezes well.

    Serves: 4 

    • 1 onion, diced
    • 4 tablespoons olive oil
    • 3 tomatoes, diced
    • 1 to 2 tablespoons tomato purée or passata
    • salt and freshly ground black pepper, to taste

    1. In a large frying pan over medium heat, cook the onion in olive oil until translucent. Stir in tomatoes, cook until juice begins to thicken.
    2. Stir in tomato purée, salt and pepper. Reduce heat and simmer 15 minutes more, until rich and thick.

    Used different ingredients. This is a great sauce. I found it to be missing a bit of richness, so I added 225ml of chicken stock and let it reduce down, I also added some fresh basil right before serving. I served the sauce over spaghetti with homemade meatballs. The result was fantastic! - 29 Sep 2008


    Used different ingredients. This was a super fast and easy recipe! My family really liked it but I did alter it a bit. I followed some suggestions of other reviewers and reduced the olive oil. I also added some spring onions. When the sauce was simmering, I added some dried garlic, dried basil and grated pecorino romano cheese. It was GREAT! - 29 Sep 2008


    i find it very hard to get my kid's to eat jars of sauce. But they all really enjoyed this quick and easy sauce and the best thing about it is you can also add whatever herbs and spices you like just to add to the flavour. Great all round sauce thanks Lima - 29 Sep 2008
