No Cook Vanilla Custard Squares

    These no-cook vanilla slices have a white chocolate topping and taste so good that I guarantee you will really like them! It's easy enough for older children to make, too

    Serves: 30 

    • Base
    • 150g butter
    • 60g sugar
    • 250g crushed digestive biscuits
    • 250g dessicated coconut
    • Filling
    • 150g butter
    • 115g icing sugar
    • 5 tablespoons of milk
    • 8 tablespoons custard powder
    • Topping
    • 250g white chocolate, melted
    • 3 tablespoons of cream optional

    Preparation:20min  ›  Extra time:9hours chilling  ›  Ready in:9hours20min 

    1. Base: Melt butter and sugar. Stir in crushed biscuits and coconut. Press into a lightly greased 30cm square tin. Chill for 1 hour.
    2. Filling: Blend butter, icing sugar, milk and custard powder. Spread over base and chill.
    3. Topping: Melt chocolate and cream together. Transfer into a clean sandwich bag and cut a small hole at the corner. Squeeze or drizzle it on top of the filling (any kind pattern that you want).
    4. Use a clean sharp knife to cut into 30 pieces. Do not take them out.
    5. Chill overnight. Allow to stand at room temperature for 30 minutes before serving.

    Something else. I used a 23cmx23cm silicone square cake pan, and my white chocolate for the topping didn't melt properly, so I dropped it on in small clumps and spread it around a bit with a knife and then chilled it, and it set with a lovely chunky crunchy chocolate topping!     Did not like this at all. Far to much custard powder. Have searched internet and found that it should be 2 not 8 tablespoons of custard powder. I have since tried the altered one and it was lovely. Filling ingredients should be put in mixer and whisked like butter ice.  -  18 Feb 2010  (Review from Allrecipes UK & Ireland)
