Baked Chips with Parmesan and Basil

These tasty chips will crisp up well in the oven but are heaps healthier than fried. Substitute another herb, such as oregano or parsley for the basil if you wish.

Serves: 4 

  • 3 large potatoes, sliced into chips
  • cooking spray or 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 25g grated Parmesan cheese
  • salt and freshly ground pepper, to taste

  1. Preheat the oven to 200 degrees C. In a mixing bowl, toss the potato chips in the tablespoon of olive oil. Sprinkle with basil, Parmesan, salt and pepper, then toss well to coat.
  2. Arrange the chips in a single layer on a medium baking tray. Do not crowd on the tray to make sure the chips turn crispy.
  3. Bake 25 minutes in the preheated oven or until golden brown.
