Baked Chips with Parmesan and Basil

    40 minutes

These tasty chips will crisp up well in the oven but are heaps healthier than fried. Substitute another herb, such as oregano or parsley for the basil if you wish.

    Serves: 4

    • 3 large potatoes, sliced into chips
    • cooking spray or 1 tablespoon olive oil
    • 1 teaspoon dried basil

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min

    1. Preheat the oven to 200 degrees C. In a mixing bowl, toss the potato chips in the tablespoon of olive oil. Sprinkle with basil, Parmesan, salt and pepper, then toss well to coat.
    2. Arrange the chips in a single layer on a medium baking tray. Do not crowd on the tray to make sure the chips turn crispy.
    3. Bake 25 minutes in the preheated oven or until golden brown.

This was a great way to make homemade fries. I ended up adding all the ingredients into a ziploc bag and shaking it really well to evenly coat the fries. I placed them on a piece of foil (spray the foil so fries don't stick) on a baking sheet, and that made clean up super quick and easy. Great fries!!  -  15 Aug 2003  (Review from Allrecipes USA and Canada)
