Baked Brie with Figs

    This has a been a hit every time I have served it. This can be an entree or dessert and it is quick and tasty - especially when figs are in season.

    Serves: 2 

    • 40g brown sugar
    • 2 teaspoons water
    • 2 fresh figs, stemmed and quartered
    • 1 round brie cheese (125g)
    • 2 1/2 tablespoons toasted, slivered almonds
    • dash of vanilla essence

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 165 degrees C.
    2. Heat brown sugar and water in a small saucepan over medium heat until sugar is completely dissolved. Add figs and vanilla, and cook until softened, about 10 minutes. Stir in almonds. Place brie in a baking dish, and pour fig mixture over the top.
    3. Bake in the preheated oven for 10 to 15 minutes, or until softened but not melted. Serve with water crackers.
