    This is a great combo of a salad that doesn't skimp on taste or good nutrition! The chickpeas and feta are a great taste toegether.

    Serves: 8 

    • 2 (400g each) tins chickpeas, drained
    • 2 cucumbers, halved lengthwise and sliced
    • 1 punnet cherry tomatoes, halved
    • 1/2 red onion, chopped
    • 2 cloves garlic, minced
    • 400g black olives, drained and chopped
    • 50g crumbled feta cheese
    • 1/2 cup salad dressing of your choice, or olive oil
    • 1/2 lemon, juiced
    • salt and pepper, to taste

    1. Combine the chickpeas, cucumbers, tomatoes, red onion, garlic, olives, feta, salad dressing, lemon juice, salt and pepper. Toss together and let salad sit for an hour or two before serving.
