These Russian tea cakes are also known as Mexican wedding cakes, butterballs and finally snowball cookies because of the icing sugar dusting they have. Whatever you call them they are a tasty treat to eat.


Serves: 18 

  • 225g butter
  • 1 teaspoon vanilla essence
  • 6 tablespoons (50g) icing sugar
  • 2 cups (250g) plain flour
  • 1 cup (115g) chopped walnuts
  • extra icing sugar, for decoration

Preparation:20min  ›  Cook:12min  ›  Ready in:32min 

  1. Preheat oven to 180 degrees C.
  2. In a medium bowl, cream butter and vanilla until smooth. Combine the icing sugar and the flour, then stir into the butter mixture until just blended.
  3. Mix in the chopped walnuts. Roll dough into 2cm balls and place them 5cm apart on an ungreased baking sheet.
  4. Bake for 12 minutes in the preheated oven. When cool, roll in the extra icing sugar. I also like to roll mine in the sugar a second time!

Very easy to make and absolutely beautiful. Love the walnuts and the fact that the teacakes aren't too sweet as they are covered in icing sugar anyway - definitely will be making these all year round not just at Xmas - 28 Oct 2010
