Basil Pesto

    Came across this recipe some time ago I think it's the best Pesto around. It is super easy and doesn't deviate from the traditional recipe very much.

    Serves: 30 

    • 2 garlic cloves, peeled
    • 1/4 cup pine nuts
    • sun dried tomatoes
    • 1 medium bunch fresh basil
    • tablespoons of oil that the sun dried tomatoes was in

    Preparation:10min  ›  Ready in:10min 

    1. Place the garlic in a food processor or blender. Add the pine nuts and sun dried tomatoes then process until the ingredients are finely chopped and thoroughly combined.
    2. Add the basil, including all the soft stalks. Process until the basil is chopped and the mixture begins to clump together.
    3. Add the sun dried tomato oil and process until combined. The sauce should have a fine, slightly grainy texture. Serve with pasta.

    Something else. adding a squeeze of lemon juice gives it a bit of extra zing  -  07 Aug 2009
