Oxtail is the secret ingredient which adds richness to this simple beef stew. It's easy to make but must simmer for a while.

Ingredients
Serves: 20 

  • 450g diced beef like chuck steak or casserole steak
  • 1 piece oxtail
  • 4 tablespoons pearl barley
  • 3 carrots, peeled and left whole
  • 1 onion, peeled and left whole
  • 3 stalks celery and left whole
  • salt to taste

Directions
Preparation:10min  ›  Cook:3hours  ›  Ready in:3hours10min 

  1. In a large 6 litre stockpot, combine beef, oxtail, barley and carrots. Cover with water to within 5cm of top of pot. Bring to a boil, then reduce heat and simmer 1 hour.
  2. Place onion and celery in pot, season with salt to taste, and continue to simmer 2 hours more.
  3. Remove onion, carrots, bone and celery. Serve with crusty bread for a filling and warming meal.

Note:

If you don't have an oxtail, use any beef bone. You can get one from a butcher.
