Mango Strawberry Fruit Salsa

    An unusual fruit salad/salsa with the tang of balsamic vinegar and fresh lime and lemon juice. Very refreshing.

    Ingredients
    Serves: 6 

    • 30ml balsamic vinegar
    • 160ml orange juice
    • 60ml lemon juice
    • 30ml lime juice
    • 2 diced fresh mango
    • 2 punnets strawberries, diced

    Directions
    Preparation:20min  ›  Cook:20min  ›  Ready in:40min 

    1. Stir together the balsamic vinegar, orange juice, lemon juice and lime juice in a large bowl. Gently fold in the mango and strawberries until blended. Allow the mixture to rest at least 20 minutes before serving.

    this was delicious and shared it with friends who asked. I tasted it too early and so added a tsp of sugar as it was sour but my suggestion is to taste it after it's been sitting for at least 1/2 hour.  -  17 Apr 2013

    I served this for a baby shower with cinnamon pita chips and it was a huge hit. The smaller you chop up the fruit the better and I drained a little of the juice off before serving just so it was easier to eat.
