Chicken and Mushroom Risotto

    40 minutes

    A healthy dish which is very easy to make using chicken, onion, fresh mushrooms and arborio rice. Feel free to dress it up with some garlic and chilli if you like.

    Serves: 4 

    • 2 teaspoons olive oil,
    • 1 large chicken breast, diced
    • 2 1/2 cups chicken stock
    • freshly ground black pepper
    • 1 large onion, diced
    • 250g arborio rice,
    • 200g mushrooms, diced
    • 1/4 cup freshly grated Parmesan cheese.

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Heat oil in a large frying pan and saute onion until translucent. Add chicken and cook until browned. Add rice and stir until all the grains are coated with oil.
    2. Pour in chicken stock, add mushrooms and fold through. Season with pepper then cover. Simmer gently until all the liquid has been absorbed, about 20 minutes.
    3. Fold parmesan through rice mixture, serve immediately.

    This recipe was really easy and very yummy. I added the garlic with the onion. Also added some sliced shortcut bacon with the chicken and some peas about 5 min before it was ready and added some mixed herbs when seasoning... Will deffinately make it again... I also boiled the stock before adding it as I read somewhere that is stops the rice from going gluggy ( I'm not actually sure if it makes a difference)  -  09 Feb 2015


    This was a quick dish to make. I added the garlic with the onion. I also added some chilli powder at the stock stage. Well worth making again.  -  05 Jun 2015
