Thelma's Spinach Tuna Bake

    This is an extremely delicious and easy dinner. This tuna, potato and spinach bake is loved by kids and adults.

    Serves: 4 

    • 2 large potatoes, sliced
    • 60g butter
    • 1 large brown onion , diced finely
    • 1/4 cup plain flour
    • 1 1/2 cups milk
    • 1 egg, lightly beaten
    • 250g frozen spinach, thawed
    • 1 (425g) can tuna in brine, drianed
    • 1/2 teaspoon cracked pepper (optional)
    • 1 cup grated Cheddar cheese
    • 300ml sour cream

    1. Boil, steam or microwave potato slices until just tender. Drain.
    2. Preheat oven to 180 degrees C..
    3. Heat butter in a medium saucepan over low heat. Cook onion, stirring, for 8-10 minutes or until soft but not coloured.
    4. Add flour and cook for about 2 minutes. Gradually add the milk and stir until it comes to the boil and thickens. When this has thickened, turn heat down to low.
    5. Add egg, spinach, cheese, cracked pepper to taste, tuna and half the cheese and stir until everything is combined.
    6. Spoon mixture into a 30cm x 20cm ovenproof dish, then cover with potato slices. Spread the sour cream on top, then cover with remaining grated cheese. If it is a smaller, deeper dish, put half the mixture in, then a layer of potato slices, then remaining mixture. Cover with potato slices, sour cream and grated cheese.
    7. Bake for about 30 minutes or until golden brown on top.
