Thelma's Spinach Tuna Bake

    This is an extremely delicious and easy dinner. This tuna, potato and spinach bake is loved by kids and adults.

    Serves: 4 

    • 60 grams butter
    • 1 large onion - diced finely
    • 3 tablespoons plain flour
    • 1½ cups (375ml) milk (you can use lite white if you like)
    • 1 packet (250g) frozen spinach (cook according to instructions on packet)
    • 1 egg, lightly beaten
    • 1 x 425g can tuna in brine (drain the brine)
    • cracked pepper (optional)
    • 1/2 cup grated cheese
    • For the top
    • 2 large potatoes – boiled or steamed until tender, then sliced. You can leave the skin on.
    • 1 x carton (300ml) full fat sour cream
    • enough grated tasty cheese to cover the top

    1. Put the potatoes on the boil so they can cook, and then cool them down.
    2. Preheat oven to 180 degrees.
    3. Cook the onion in butter until the onion is transparent, [approx 10 min.]
    4. Add flour and cook for about 2 minutes. Add the milk and stir until it comes to the boil and thickens. When this has thickened, turn heat down low.
    5. Add egg, cooked spinach, cheese, a bit of cracked pepper to taste, tuna and stir until everything is combined.
    6. Put mixture in dish 30cm x 20cm, then cover with potato slices. Spread the sour cream on top, then cover with more grated cheese. If it is a smaller, deeper dish, put half the mixture in, then a layer of potato slices, then remaining mixture. Cover with potato slices, sour cream and grated cheese.
    7. Cook in 180 degree oven for about 30 minutes or until golden brown on top.
