Greek Orzo Salad

    Simple summer salad that is quick and easy with orzo, tomato, cucumber, olives, cannelini beans and a sundried tomato pesto vinaigrette. Great for your next barbecue.

    Serves: 4 

    • Salad
    • 100g orzo
    • 1 tomato
    • 1/4 telegraph cucumber
    • 20g black spanish olives
    • 1 (400g) tin cannelini beans
    • Italian parsley, to taste
    • Dressing
    • 1 tablespoon lemon juice
    • 1 teaspoon balsamic vinegar
    • 1 tablespoon sundried tomato pesto

    1. Boil orzo according to packet.
    2. Cut the tomato, cucumber into squares and place in the drained, cooled pasta.
    3. Drain and rinse the beans then add to the orzo, roughly chop the parsley then add it as well.
    4. For the dressing cut open the lemon and juice one straight into the salad, add 1 tablespoon of balsamic vinegar and one tablespoon of sundried tomato pesto. Add freshly cracked pepper.
