Why not have a go at making your own Italian Christmas bread? This recipe is only suitable for the bread machine. I have tried it many times successfully, you will love it.

Ingredients

¾ cup (190ml) warm water
65g butter
2 eggs
1½ teaspoons vanilla essence
3¼ cups bread flour
2 tablespoons white sugar
2 tablespoons dry milk powder
1½ teaspoons salt
2 teaspoons bread machine yeast
½ cup chopped dried mixed fruit

Preparation method

1. Place all of the ingredients except for the mixed fruit into the pan of your bread machine in order directed by manufacturer. Select Sweet or Basic/White bread cycle, and use the Medium or Light crust color. Do not use the delay cycles.
 
2. Add the fruit 5 to 10 minutes before the last kneading cycle ends, or when the raisin or nut signal sounds.

  • I made this recipe and it turned out perfect. I substituted sultanas for the mixed peel. Will make this to give to friends. Pannetone is supposed to be a little dry, so you can dip it into your coffee!!

    I like to toast slices of Panettone and serve with a selection of jams for Christmas day breakfast. This was my first time making it though and it came out a little dense and dry. Bread machines are fickle things...what's good for one is not for another so I may need to tinker a little with this recipe for my bread machine.
