Tobi's Chocolate Chip Cookies

    This recipe makes amazing soft, chewy chocolate chip cookies! I usually double the recipe and my flatmates eat the lot in a few days!

    Serves: 36 

    • 1 2/3 cups plain flour
    • 3/4 teaspoon baking powder
    • 1/2 teaspoon salt
    • 3/4 cup butter, softened
    • 3/4 cup packed brown sugar
    • 1/3 cup white sugar
    • 1 egg
    • 1 teaspoon vanilla essence
    • 1 cup milk chocolate chips

    1. Preheat the oven to 190 degrees C.
    2. Sift together the flour, baking powder, and salt; set aside.
    3. In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the egg and vanilla.
    4. Gradually stir in the sifted ingredients, then stir in the chocolate chips.
    5. Drop by rounded tablespoonfuls onto ungreased baking sheets.
    6. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
