This is the treat my children love to make themselves after a good term at school or when they have a friend staying. One cake is big enough to share between 2 children if you can convince them of it!!!

Ingredients

4 tablespoons flour
2 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons butter flavour infused rice bran oil, or butter
¼ teaspoon vanilla essence or peppermint
1 tablespoon choc chips
1 large mug

Preparation method

1. Add dry ingredients to the mug, and mix well.
 
2. Crack an egg and add it to your mug. Be sure to mix it well to avoid any pockets of flour in the corners. Pour in the milk and oil and mix well. Add the vanilla essence.
 
3. Pop your mug into the microwave & zap for 3 minutes on maximum power (1000watt). Wait until the cake stops rising, and sets in the mug.
 
4. If necessary, run a knife around the sides of the mug, and tip the still warm cake out of the mug and onto a saucer.

  • Tweak: 06bek Used different ingredients:

    I also whipped up some ganache (1 tbsp butter, 1 tbsp cream, 2 tbsp chocolate bits) to pour over my cake. Served it with ice-cream and a drizzle of thickened cream.

    Tweak: 06bek Altered ingredient amounts:

    I added 2 tablespoons of dessicated coconut for taste. Also, 1 tablespoon of chopped up marshmallows but I couldn't really taste them in there. I also upped the sugar to 3 tablespoons and I used self raising flour instead of plain as well.

    not soft and moist as it looked, was a little 'tough' for a cake, and the flavour was just not there.
