What a fun afternoon tea. The kids loved it, the alcohol is cooked out of it so its fine for everyone. I make mini muffins but you could make larger ones. Can be frozen. Prenzel is a New Zealand company.

Serves: 24 

  • 1 cup roughly chopped liquorice allsorts
  • 2 cups flour
  • 3 tsp baking powder
  • 2 tbsp sugar
  • 2 eggs
  • 2 tbsp Prenzel Sambuca
  • 1 cup milk
  • 50g butter

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Mix liquorice allsorts, flour, baking powder and sugar together in a bowl.
  2. Make a well in the centre of the dry ingredients.
  3. Lightly beat eggs.
  4. Add Prenzel Sambuca and milk to eggs.
  5. Melt butter.
  6. Pour egg mixture and butter into dry ingredients and mix until just combined.
  7. Three quarters fill greased muffin pans with mixture.
  8. Bake at 190°C for 15 minutes or until muffins spring back when lightly touched.
