    I make this at Christmas but you could make it any time. It is lovely with no icing etc, kids demolish it in no time. You can place almond halves, whole cherrys etc at the bottom of the pan for decoration. Great to freeze and have ready for those surprise occasions. Prenzels is a New Zealand made product.

    Ingredients
    Serves: 24 

    • 125g butter
    • 1 cup sugar
    • 400g sultanas
    • 250g glace cherrys
    • 450g can crushed pineapple
    • 2 Tbsp Prenzel Mulled Wine Toddy
    • 1 tsp baking soda
    • 2 eggs, beaten
    • 2 cups flour(can use white or whole meal or a mixture)
    • 2 tsp baking powder

    Directions
    Preparation:50min  ›  Cook:1hour30min  ›  Ready in:2hours20min 

    1. Bring the butter, sugar, fruit, pineapple, Mulled Wine Toddy and baking soda to the boil, then simmer for 5 minutes, stirring regularly.
    2. Cool then add other ingredients.
    3. Bake for 1 hour at 180°C, then lower temperature to 150°C for another hour or when firm to touch.
    4. Cooking in a fanbake oven takes less time.
    5. If cake starts to brown excessively, cover with tin foil.
    6. Cool cake in tin. (I use a silicone tin.)
