Cheesy Leek Soup

    A creamy leek soup with a sharp cheese and mustard kick. It makes a delicious lunch served with cheese and onion bread or walnut bread. Plus, it's vegetarian too!

    Serves: 4 

    • 1kg leeks, washed and sliced
    • 1 large onion, diced
    • 2 potatoes, diced
    • 3 stick celery, diced
    • 30g butter
    • 300ml cream
    • 300ml water, or as needed
    • 30g Gruyere cheese, grated
    • 60g Cheddar cheese, grated
    • salt and pepper, to taste

    1. In a large saucepan over medium heat, saute the leeks, onion, potato and celery in the butter for 10 minutes, or until all vegetables are tender.
    2. Add the cream and water and bring to almost the boil. Remove from the heat then use an immersion blender until smooth.
    3. Add the cheese and stir in until melted. Season the vegetable mixture with salt and pepper. Serve
